The best environment for yeast storage is a cool, dry place. Active dry yeast is best stored between 33 and 38-degrees-F. Most yeasts in a package can be stored at room temperature, with the exception of fresh yeast, which should be refrigerated.

How long does dry yeast last?

The shelf life of unopened active dry yeast is generally about 12 to 18 months when stored in a cool, dry area. Once opened, dry yeast should be stored in an airtight container in the freezer for up to six months. Fresh yeast should not be frozen.

Can expired yeast still be used?

The only way to determine if expired yeast is no longer active is to test it by mixing it with lukewarm water and waiting 10 minutes to see if it begins to bubble. If the yeast starts to bubble, this means that some or most of the yeast cells are still alive and the yeast can indeed be used for baking. Yeast is a living organism so it will eventually be less effective as the months pass.
